I started my day off by prepping peppers and onions for chicken fajitas. I used a Pinterest recipe where you put the veggies into a crockpot with chicken broth, spices, lime juice and raw chicken. Then you let it cook all day on low, shred the chicken and voila, chicken fajitas. They were super good, although gluten free soft tortillas suck. They crumble when you try to roll them, but the chicken was awesome.
