Tonight it was Ron and I’s turn to cook dinner. We made tacos, refried beans and Spanish rice for about 30 people. Apparently it was pretty good too because they ate seconds. I’d call that a success and now our turn is done which means we can stay out on the beach longer.

There’s nothing better than waking up during vacation. The sun was streaming through the window and I got to watch the Olympics before breakfast and a full day on the beach. Perfection.

We made it to the beach this morning, after running into a little traffic. After lunch, unpacking and grocery shopping, we had dinner and then finally actually stepped out on the beach. The sunset was pretty amazing, going from cotton candy colored to an amber glow. Tomorrow will be our first full day, with some sunbathing and maybe volleyball. I feel blessed that we’re able to take a vacation and am super grateful for it. I pray that we’ll have a safe week and a great time. Also, I checked on Buddy and he’s doing great so hopefully he also has a great, safe week.

We’re all packed and ready for the beach. We took Buddy to my parents’ house earlier. I’m sure he’ll enjoy his vacation there with them, but we’ll miss him. We leave early in the morning though so it’s time for bed.

My underwater camera came today, just in time for the beach. I decided to go with the Panasonic Lumix TS20 because it had good ratings and was pretty inexpensive. I’ve only taken maybe three pictures with it so I really need to sit down and read all about the waterproof part. I figured if I got it now I could test it out at the beach and have time to return it if something goes wrong before our cruise at the end of September. I wanted something to get some underwater shots so we’ll see how it goes.

The local agricultural fair begins this weekend so I spent the evening getting my photography entries ready. I’m entering 11 photos and it’s the first time I’ve ever entered any so I’m not quite sure what I’m doing. In my defense the instructions could be a little better, but hopefully I did everything right. The only thing I’m unsure of is I can’t drop them off myself because I have to work so Ron is doing it for me. I hope they don’t have a problem with that. Everything is labeled on the back and I included the entry form so it shouldn’t be a problem.

I finally got a chance to use my organic zucchini tonight. I paired it with some squash from a family member’s garden and sauted it with butter. It was amazing and very fresh. The only thing that would have made it better would have been bacon. Because of some recent freezer issues, my turkey bacon was kind of sketch so I decided to skip it. Maybe next time.

I think someone has been playing with my frog, or he’s taking up break dancing. I have little trinkets in my room next to the tv–a hand carved wooden lion I won from an African presenter in middle school, a frog from my cousin’s hospital room, a hand carved wooden seahorse from the Caribbean and this little green frog. My niece plays with them sometimes and I guess this time she got creative. Such a goof 🙂

Ron and I booked our anniversary vacation today. We were actually on the fence about this one, but we got such a great deal we couldn’t pass it up. During the first week of October we will be cruising to two places in Mexico, Belize and Isla Roatan. We’ve had great luck with our past two vacations so I’m sure this one will be awesome too.
